Heat olive oil over medium heat.

3. Lower heat to medium-low and cook, stirring occasionally, until soft and caramelized—about 20 minutes.
4. Add vinegar and reduce for 1 minute, then remove from heat.
5. In a medium serving bowl, combine onions and yogurt.
