Tomato Cucumber Salad

Preparation

  1. Cut cucumbers in half then into ½ inch slices.
  2. Combine tomatoes, cucumbers, and onions in a salad bowl. Season to taste with salt and black pepper.
  3. Whisk together olive oil, vinegar and sugar and basil, sprinkle vegetables with mixture. Mix together and chill before serving.

Additional Serving Suggestions

  • Portion into 5 oz cups

 

½ cup salad = 1 vegetable serving (5 whole/10 half grape tomatoes OR 3 whole/6 half cherry tomatoes with cucumbers and onions to fill the cups = 1/4 cup red/orange vegetable)

Ingredients

Makes 50 (1/2 cup) servings

4 lbs grape/cherry tomatoes, cut into halves
4 lbs cucumber, peeled
1 lb red onions, chopped
½ cup vinegar
1 cup olive oil/vegetable oil.
1 oz/2 Tb salt (to taste)
½ oz/1 Tb ground black pepper (to taste)
1 oz/ 2 Tb granulated sugar
2 oz fresh/ 1 oz dried basil
