Sweet Potato Salad

This yummy twist on traditional potato salad is sure to be a colorful hit!

Preparation

  1. Add the sweet potatoes to a large pot of cold, salted water. Bring to a boil over medium-high heat and cook the potatoes until tender, about 15-20 minutes.
  2. Drain the potatoes and let cool in a colander.
  3. Once the potatoes are cool, transfer to a large serving bowl and add the red pepper and green onions.
  4. In a separate bowl, combine the yogurt, orange juice, paprika, cumin and salt and pepper.
  5. Pour over the potatoes mixture and stir to coat.
  6. Serve immediately or refrigerate for 1 hour for the flavors to mix.

Ingredients

Makes 4-6 servings

  • 2 pounds sweet potatoes, peeled and cut into cubes
  • 1 red pepper,  chopped small
  • 4 green onions, chopped (optional)
  • 1/3 cup fat-free Greek yogurt
  • 2 Tbs. orange juice
  • 1 tsp. paprika
  • ½ tsp. ground cumin
  • Salt and pepper to taste
