Sweet Potato & Apples

Preparation

CCP: Wash hands thoroughly. Put on clean gloves.
CCP: Gather clean and sanitized equipment and utensils.

  1. Prepare hotel pan (12x20x2 1/2) with pan spray.
  2. Place sweet potatoes in pan.
  3. Drain apples, pour on top of sweet potatoes.
  4. Mix brown sugar and cinnamon together in a small bowl. Sprinkle on to sweet potato and apple mixture. Pour water over mixture.
  5. Dot with margarine. Cover pan with foil.
  6. Bake according to oven type:
    • Conventional oven at 350° F for about 30 minutes or until internal temperature of 140°F or higher is achieved, or
    • Convection oven, at 300°F for about 20 minutes or until internal temperature of 140°F or higher is achieved.

CCP: Hold at 135°F for service.
CCP: If reheating is necessary, reheat to 165°F for at least 15 seconds. Ensure that no more than 2 hours have elapsed from 41° until reheating process occurs.
 

Additional Serving Suggestions

  • Serve 1/2 cup using a #8 scoop

 

4 oz. = 1/2 cup red/orange vegetable

  • 10 pounds sweet potato chunks
  • 1 #10 can canned apples (unsweetened, sliced, in water)
  • 6 ounces brown sugar
  • 1 teaspoon ground cinnamon
  • 2 ounces margarine (80% fat, tub, canola)
  • 1 cup water
