Preparation
CCP: Wash hands thoroughly. Put on clean gloves.
CCP: Gather clean and sanitized equipment and utensils.
- Prepare hotel pan (12x20x2 1/2) with pan spray.
- Place sweet potatoes in pan.
- Drain apples, pour on top of sweet potatoes.
- Mix brown sugar and cinnamon together in a small bowl. Sprinkle on to sweet potato and apple mixture. Pour water over mixture.
- Dot with margarine. Cover pan with foil.
- Bake according to oven type:
- Conventional oven at 350° F for about 30 minutes or until internal temperature of 140°F or higher is achieved, or
- Convection oven, at 300°F for about 20 minutes or until internal temperature of 140°F or higher is achieved.
CCP: Hold at 135°F for service.
CCP: If reheating is necessary, reheat to 165°F for at least 15 seconds. Ensure that no more than 2 hours have elapsed from 41° until reheating process occurs.
