Roasted Squash Salad
This easy veggie side dish is sure to be a hit with the whole family this year!
Preparation
- Preheat oven to 400 degrees.
- Toss squash, zucchini, 2 Tbs. olive oil and pepper together in a baking dish.
- Roast for 15-20 minutes or until squash is tender.
- While squash roasts, whisk together remaining ingredients.
- Carefully transfer squash to a glass bowl. Toss with dressing.
- Serve warm or cold.
