Roasted Squash Salad

This easy veggie side dish is sure to be a hit with the whole family this year!

Preparation

  1. Preheat oven to 400 degrees.
  2. Toss squash, zucchini, 2 Tbs. olive oil and pepper together in a baking dish.
  3. Roast for 15-20 minutes or until squash is tender.
  4. While squash roasts, whisk together remaining ingredients.
  5. Carefully transfer squash to a glass bowl. Toss with dressing.
  6. Serve warm or cold.

Serves 4

  • 1 yellow squash, cut in chunks
  • 1 zucchini, cut in chunks
  • 3 Tbs. Olive oil
  • ½ tsp. pepper
  • 2 Tbs. balsamic vinegar
  • 2 Tbs. low sodium soy sauce
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
