Greenville County's Shepherd's Pie

Preparation

  1. Prepare the workstation by cleaning and sanitizing all areas.
  2. Gather all ingredients for preparation.
  3. Preheat oven and braising pan to 350 degrees.
  4. Add oil to the braising pan. Add onions and sauté until tender.
  5. Add ground beef to braising pan and thoroughly cook. Product must reach an internal temperature of 160 degrees for 15 seconds. Thoroughly drain all the grease from the cooked ground beef.
  6. Add 5 way vegetables, water, beef base, Worcestershire sauce, salt, and pepper to beef mixture and cook for 5 minutes. Add more beef broth if necessary to keep moist.
  7. Spray 4" hotel pans with pan coating spray.
  8. Divide beef mixture evenly into 4" hotel prepared pans. Place equal amounts of mashed potatoes on top of each pan.
  9. Place equal amounts of cheese on top of potatoes.
  10. Bake in oven for 15-20 minutes or until golden brown. Product must reach an internal temperature of 160 degrees for 15 seconds.
  11. Cover and place in hot holding cabinet maintaining an internal temperature of 140-150 degrees.

  • 15 lbs. Ground beef, 85% lean, 15% fat, raw
  • ½ c. Vegetable oil
  • 1 lb. 8 oz. Onions, raw
  • 5 lbs. 5-way vegetable mix, frozen
  • 1 gal. Water
  • ¾ c. Worcestershire sauce
  • ¼ c. Salt
  • ¾ tsp. Black pepper
  • 4 lbs. Reduced fat, reduced sodium mild cheddar cheese, shredded
  • ½ c. Beef base, no added MSG
  • 100 (1/2 c.) Mashed potatoes
